Crust-less Italian Quiche
21 Day Fix Style
Ingredients
- 10oz 2% cottage cheese
- 6oz Ricotta Cheese
- 2 cups fresh Spinach (roughly two large handfuls)
- 4 eggs, beaten
- 2/3 cup mozzarella cheese
- 1/3 cup parmesan cheese , grated or shaved
- 1 red, yellow, or orange bell pepper, diced
- 2 tsp oregano
- Set oven to 350 degrees
- Spray a quiche dish or 9 inch pie plate with cooking spray
- Beat 4 eggs in large bowl and mix in all of the ingredients
- Pour into prepared dish
- Bake for 40-45 minutes until center is set
21 day fix break down: 1 green, 1 red, 1 blue if cut into 4 slices,
Note: I didn't have mozzarella cheese on hand, and it was just as tasty with a cheddar Monterey jack blend I had around! I will most likely throw some thinly sliced/diced onions in next time too! Play around with the recipe and let me know if you find something that you love!
