This is by far my FAVORITE recipe at the moment. It is healthy and oh so delicious!! For my fellow 21 day fixers out there- It's FIX APPROVED! For my non fixer friends, that just means that it is a clean eating meal with minimally processed ingredients! I count it as 1 Yellow (pita bread), 1-1.5 Red (meat and tzatziki sauce) 1/2 green (lettuce, peppers, tomato toppings). It pairs really well with some lemony green beans. I also had the leftovers the next day as a really big Greek chicken salad! YUM!!! In fact, I've had it 3 days in a row now and am still loving it. I'm running low on Tzatziki sauce though....I'll probably double that recipe next time!
- 3 Lemons (juice of)
Tzatziki Sauce:
- 1.5 cup Greek Yogurt (I used 2%)
- 1 large cucumber
- Dill (1 tbsp fresh chopped or 1-2 tsp dried)
- 1 garlic clove
- 1/2 Lemon (juice of)
- Parsley (4 fresh leaves)
- salt
- pepper (amount to your liking)

- Peel and remove seeds from cucumber. (Cut cucumber in half lengthwise and use a metal spoon to scoop out the seeds)
- Chop cucumber and place in a colander. Generously salt (approximately 1 tbsp) and let sit for 30 minutes to draw out water.
- Blot cucumbers with paper towel to remove excess water and salt.
- Place in food processor with garlic, lemon juice, dill, parsley, and pepper until cucumbers are finely diced.
- Mix into greek yogurt. Let stand in the refrigerator for at least 2 hours to allow all the flavors to blend!
- Enjoy!! (I could seriously eat this stuff by itself! SOOOO GOOD!!!)
