Crockpot Chicken Gyros with Tzatziki Sauce

Greek Chicken Gyros with Tzatziki Sauce

This is by far my FAVORITE recipe at the moment.  It is healthy and oh so delicious!!  For my fellow 21 day fixers out there- It's FIX APPROVED!  For my non fixer friends, that  just means that it is a clean eating meal with minimally processed ingredients!  I count it as 1 Yellow (pita bread), 1-1.5 Red (meat and tzatziki sauce) 1/2 green (lettuce, peppers, tomato toppings).  It pairs really well with some lemony green beans. I also had the leftovers the next day as a really big Greek chicken salad!  YUM!!!   In fact, I've had it 3 days in a row now and am still loving it.  I'm running low on Tzatziki sauce though....I'll probably double that recipe next time!  
 
  • 3 Lemons (juice of)

Tzatziki Sauce:
  • 1.5 cup Greek Yogurt (I used 2%)
  • 1 large cucumber
  • Dill (1 tbsp fresh chopped or 1-2 tsp dried)
  • 1 garlic clove
  • 1/2 Lemon (juice of)
  • Parsley (4 fresh leaves)
  • salt
  • pepper (amount to your liking)
Gyro Instructions:

Tzatziki Sauce Instructions:
  1. Peel and remove seeds from cucumber. (Cut cucumber in half lengthwise and use a metal spoon to scoop out the seeds)

  3. Chop cucumber and place in a colander.  Generously salt (approximately 1 tbsp) and let sit for 30 minutes to draw out water.
  4. Blot cucumbers with paper towel to remove excess water and salt.
  5. Place in food processor with garlic, lemon juice, dill, parsley, and pepper until cucumbers are finely diced.
  6. Mix into greek yogurt.  Let stand in the refrigerator for at least 2 hours to allow all the flavors to blend!
  7. Enjoy!!   (I could seriously eat this stuff by itself!   SOOOO GOOD!!!)

Italian Spinach Quiche

Crust-less Italian Quiche
21 Day Fix Style



Serves 4 BIG or 8 small

Ingredients
  • 10oz 2% cottage cheese
  • 6oz Ricotta Cheese
  • 2 cups fresh Spinach (roughly two large handfuls)
  • 4 eggs, beaten
  • 2/3 cup mozzarella cheese
  • 1/3 cup parmesan cheese , grated or shaved
  • 1 red, yellow, or orange bell pepper, diced
  • 2 tsp oregano
  1. Set oven to 350 degrees
  2. Spray a quiche dish or 9 inch pie plate with cooking spray
  3. Beat 4 eggs in large bowl and mix in all of the ingredients
  4. Pour into prepared dish
  5. Bake for 40-45 minutes until center is set

21 day fix break down:  1 green, 1 red, 1 blue if cut into 4 slices,

Note:  I didn't have mozzarella cheese on hand, and it was just as tasty with a cheddar Monterey jack blend I had around!  I will most likely throw some thinly sliced/diced onions in next time too!  Play around with the recipe and let me know if you find something that you love!
