Healthy Lasagna - 21 day fix approved!

Hello friends!!!   I recently tried a new recipe and absolutely loved it!   Naturally, I decided to share it with all of you.  =)

21 Day Fix LASAGNA

Can you believe you can eat lasagna that is healthy and even more important- delicious?!  I count this meal as 1 Red, 1 Yellow, 1 Green, 1 Blue, and 1 Purple!  If you make your own tomato sauce without sugar, don't count the purple and increase to 2 greens.   Hope you like it!  This was thumbs up from my family. One fix serving is 2 of these bad boys!!  They are very filling and one is plenty paired with a nice salad.




Ingredients:
9 Lasagna Noodles (whole grain is best!)
1.5 Cups Fresh Baby Spinach (roughly chopped)
2 Cups Ricotta Cheese (I used part skim)
1/2 Cup Parmesan Cheese (personal preference - shaved Parmesan found in the refrigerated section)
1 egg
1/2 Teaspoon minced garlic (I was pretty generous with the garlic...)
1/2 teaspoon Italian seasoning
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 pound Ground Turkey Cooked (I found Italian seasoned lean ground turkey which was fantastic in this!)
Spaghetti Sauce (I prefer to make my own, but I was in a hurry and used canned - look for no added sugar!!)
1 Cup Mozzarella Shredded

1. Preheat oven to 350F.
2. Cook Lasagna Noodles according to package instructions. 
3. Put ground turkey in skillet and add salt and pepper to taste (Might add some italian seasonings/red pepper flakes to your personal taste). Crumble and cook until all pink has cooked out. Set aside.
4. Mix Ricotta Cheese, spinach, Parmesan cheese, egg, garlic, Italian seasoning, pepper, and salt in a large bowl. Add in ground turkey. Set aside.
5. In a 9x13 baking dish, place 1 cup of pasta sauce around the bottom of the dish. Spread evenly.
6. Lay a piece of wax paper on your counter, place lasagna noodles on paper and dab with paper towel to make sure all the moisture is gone.
7. Spread cheese mixture evenly over each piece of lasagna. Begin rolling one strip of lasagna at one end and roll all the way up. Place in baking dish seam side down. Continue process with all lasagna pieces.
8. Top lasagna rolls with remaining sauce and mozzarella cheese. Place aluminum foil over the dish tightly and place in the preheated oven. Bake for 40 minutes. Serve immediately.
